
- Maintain the cold chain from receipt to sale. Optimum temperature for strawberries is 32° to 34°F degrees
- When receiving, strawberries should pulp between 32° and 34°F degrees
- Check the overall quality of the berries including maturity, ripeness, color, size, count, and weight as well as the packaging
- Store strawberries away from any sources of moisture as it will cause product shrinkage
- Grade any berries left over from the previous day’s display early the next morning and restock as needed
- Continually check the display throughout the day and keep it fully stocked especially during peak shopping hours between 4 and 8 p.m.
- Under stocks can cause a loss of up to 14% of sales during the course of a week
- During peak promotions establish multiple displays in primary positions throughout the store
- Cross promote with complementary items such as cereals, shortcakes, and whipped toppings to encourage impulse purchases
