Purchasing
Look for fresh peppers that are rich in color, and have a firm, shiny skin.  The stem should appear fresh and intact.  Discard those that are shriveled from age, or that have soft areas.

Place fresh peppers in a paper bag or wrap in a paper towel and store in the crisper portion of your refrigerator.  Avoid well-ventilated areas, which can cause shriveling.  Fresh peppers should keep 10 to 14 days if handled properly.

Chili peppers should be rinsed prior to serving.   They add a sizzling kick to sautéed meals, and make a great addition to many condiments.  However, be careful when preparing chili peppers.  One of the peppers compounds, capsaicin, can cause burning of the skin and eyes if you come in contact with it.  Make sure to wash your knife, cutting board, and any other utensil used after preparing them.
