Look for squash that are average in size with a shiny smooth rind. Avoid squash that is highly blemished or any that have a hard rind as they may be over mature with stringy, fibrous texture.

Squash are very fragile and care should be taken so as not to bruise or break the vegetable during storage. Place squash, in the plastic bag you purchased them with, in
the refrigerator and they will keep for 5 to 7 days. Do not wash squash before storage.

When ready to serve remove squash from refrigerator and wash under a steady stream of cool water. Cut off both ends and discard. You can then cut to the desired shape and size for your serving.
