Look for strawberries that have full, bright red coloring, natural sheen, and fresh looking green caps. Do not select berries that are wilted, shriveled, bruised or any that show mold. Avoid berries with green tips or white shoulders as they will not continue to ripen after purchase.

Strawberries are best if eaten as soon as possible, but you may refrigerate them in the plastic container that you purchased them in immediately when you return home. Do not wash your berries until just before use. Keep berries away from moisture, and place them carefully in your refrigerator to avoid crushing the container and bruising the fruit.

Remove the berries from the refrigerator about an hour before serving. Allow the
berries to warm to room temperature so that you may enjoy maximum flavor. Rinse the berries, with caps on, under a gentle spray of cool water. After rinsing, remove the green caps with a sharp paring knife or a light twist. If using frozen berries, care should be taken to properly thaw the fruit. We recommend refrigerator thawing to retain better shape, taste, and texture. For best results, serve while berries are still slightly frosted. Do not try to speed the thawing process by running water on the outside of the bag or on the berries themselves. This could promote growth of bacteria. After thawing, store any unused berries in the refrigerator and use within two to three days. Do not re-freeze.

Freezing strawberries is a great way for you to enjoy their sweet taste all year long! First remove the berries from the container and wash, with caps on, under a gentle spray of cool water. After washing, remove the caps and place the berries on a paper towel to dry. Whole strawberries can be stored in freezer bags to be used in a variety of recipes including jams, baked goods, and smoothies. If you would like to freeze sliced, sweetened berries you can mix equal amounts of sugar and water in a saucepan over moderate heat, stirring until the sugar dissolves. After cooling the mixture, place the
berries in a freezer bag and pour in the mix so that it completely covers the berries. It usually takes 1/2 cup of mix for each pint of strawberries. It is a good idea to freeze
berries in single layers in your freezer. Frozen strawberries can be stored for up to one year.
